Bacon Avocado Breakfast Sandwich

Start your day with a flavor-packed, keto-friendly breakfast sandwich that brings together creamy avocado, savory bacon, and fluffy scrambled eggs—all on our delicious cauliflower Sandwich Slices! This breakfast recipe is not only gluten-free but also packed with protein, healthy fats, and fresh greens to keep you energized all morning.


Ingredients:

• 2 OA Gourmet Sandwich Slices, toasted

• 1 tbsp whipped cream cheese

• 1/2 cup avocado, mashed (optional: season with a pinch of salt and pepper and some lemon juice)

• 2 slices of bacon, torn into 2-3 inch pieces

• 2 eggs, scrambled

• 1 slice cheddar cheese

• Handful of arugula


Instructions:

1. Grab a toasted Sandwich Slice and spread whipped cream cheese and mashed avocado on top.

2. Layer the bacon, scrambled eggs, and cheddar. To make the cheddar melt a bit, tent with an inverted bowl to trap heat from the eggs.

3. Top with arugula and the remaining toasted Sandwich Slice.
