Loaded Cheesy Chili Tacos

When the weather cools down, there’s nothing better than a big, hearty batch of chili. But, as comforting as it is, chili often means leftovers for days!


To keep things interesting, we’ve found a fun way to transform those leftovers into a delicious, cheesy treat. These tacos are a creative way to enjoy chili in a new form, combining our crispy cauliflower Sandwich Slices with melted cheese, tangy sour cream, and fresh avocado. Plus, with the addition of pickled jalapeños and lime, they’ve got the perfect balance of creamy, spicy, and bright flavors.


Ingredients:

• 2 OA Gourmet Sandwich Slices

• 1/4 cup shredded cheddar cheese

• 1/2 cup leftover chili

• 1 tbsp diced red onion

• 1 tbsp chopped pickled jalapeños

• 2 tbsp sour cream

• 1/2 avocado, sliced or diced

• 1/2 lime, cut into wedges


Instructions:

1. Preheat your oven to 400°F. While the oven is heating, place the Sandwich Slices on a ventilated rack on top of a baking sheet and toast in the oven for 5-7 minutes, until they’re firm and lightly crisp.

2. Remove the Slices from the oven and sprinkle shredded cheddar cheese evenly on each one. Return them to the oven for about 5 minutes, or until the cheese is melted and bubbly.

3. Meanwhile, add your leftover chili to a skillet over medium heat. Cook, stirring occasionally, until most of the liquid has evaporated and the chili is thick enough to spoon onto the Slices without dripping.

4. Once the cheese has melted, spoon the thickened chili onto each Sandwich Slice. Top with a dollop of sour cream, a sprinkle of diced red onion, chopped pickled jalapeños, and fresh avocado.

4. Serve your cheesy chili tacos with lime wedges on the side for an extra burst of flavor!
