Open Faced Chicken Salad Sandwich


This protein-packed chicken salad is the perfect low-carb, gluten-free lunch or snack, served on toasted OA Gourmet Sandwich Slices.


Ingredients:

• 2 OA Gourmet Original Sandwich Slices, toasted

• 2 cups rotisserie chicken, shredded

• 4 stalks celery, thinly sliced

• 1 tbsp chives, thinly sliced

• 3 tbsp fresh parsley, chopped (+ a little extra for garnish)

• 2 garlic cloves, finely chopped

• 1 small shallot, diced

• 2 tbsp mayonnaise

• ¼ cup Greek yogurt

• 1 tbsp Dijon mustard

• Salt and pepper to taste


Instructions:

1. In a large bowl, combine the shredded rotisserie chicken, celery, chives, parsley, garlic, and shallot. Top with mayonnaise, Greek yogurt, and Dijon mustard. Mix and season with salt and pepper to taste.

2. Pile the chicken salad onto the toasted Sandwich Slices, garnish with flaky salt, pepper, and more parsley and serve.
