Cauli-Bun Pesto Beyond Burger

Ingredients:

• Cauliflower Sandwich Rounds

• The Beyond Burger

• Chickpea Pesto. 

Directions:

In batches, heat 4 cauliflower sandwich rounds in a skillet over med-high for 1 min per side or until warm; add to 2 plates + spread each with 1 tbsp pesto.

Heat lightly oiled skillet over med-high, season burgers with salt/pep + favorite seasoning (we like garlic powder), cook 3 min per side until crispy.

Assemble burgers + add any tasty extras you like—yuuum.

Rainbow Veggie + Chicken Cauliflower Toast

Ingredients:

• Cauliflower Sandwich Rounds

• Spinach

• Artichoke 

• Rainbow Veggie Mix

• Spinach Garlic Chicken Sausage. 

• Spinach Artichoke Chickpea Dip

Directions:

Slice 3 sausages into ¼-inch rounds, heat 1 tbsp oil in skillet over med-high + sear rounds for 1-2 min per side until golden brown; set aside.

Heat 1 tbsp oil in skillet over med-high + cook veggie mix with salt/pep for 3-5 minutes until tender; set aside.

Heat a clean skillet over med-high; working in batches, heat 4 cauliflower sandwich rounds 1 min per side or until warm, then add to 2 plates.

Spread 1 tbsp sauce per cauliflower round, then top with veggie mix + sausage—mmm, looks tasty!

Heat lightly oiled skillet over med-high; pat chicken dry + sear 2 min per side until warmed through.

Assemble sandwiches, top with lettuce + any tasty extras you like—yuuum.

Instructions:  

Slice 2 sausages into ¼-inch rounds, heat 1 tbsp oil in skillet over med-high + sear 1-2 min per side until golden brown; set aside

Heat 1 tbsp oil in skillet over medium-high + cook ½ bag of brussels with salt/pep 5-6 min until tender, stirring minimally; set aside

Heat a clean skillet over med-high; working in batches, heat 4 cauliflower sandwich rounds 1 min per side or until warm, then add to 2 plates

Spread 1 tbsp pesto per cauliflower round, top with sausage + brussels + enjoy!

  • For your Rainbow Veggie + Chicken Toast, there is artichoke listed as an ingredient but not mentioned in the directions – and – there is “sauce” in the directions but not in the ingredient list.
