Spring is the season when produce finally starts to sing again. The farmer's markets are blooming with color, and everything tastes a little brighter and crunchier than it did a month ago. This veggie-packed sandwich is a celebration of that seasonal shift, and is a delicious way to get in 8 different plants in one meal.

Built on our toasted Original Sandwich Slices, it’s the perfect mix of creamy, crisp, and satisfying, with layers of fresh spring veggies and hummus.

Ingredients (Serves 1)

  • 2 OA Gourmet Original Sandwich Slices

  • 2 tablespoons hummus (any flavor you love)

  • ¼ cucumber, thinly sliced

  • A few thin slices of red onion

  • ¼ cup shredded carrots

  • ¼ red bell pepper, thinly sliced

  • ¼ avocado, sliced

  • A small handful of sprouts (such as alfalfa or broccoli)

  • Salt and pepper, to taste

  • Optional: squeeze of lemon or drizzle of olive oil

Instructions

  1. Toast the Sandwich Slices. Once toasted, generously spread the hummus on both Slices. On one slice, layer the cucumber, red onion, shredded carrots, red bell pepper, avocado, and sprouts. Season with salt and pepper to taste. Add a squeeze of lemon or drizzle of olive oil if you like.

  2. Top with the second Sandwich Slice. Press gently, slice in half if desired, and enjoy immediately!
