If you've been scrolling through your feed lately, chances are you've seen some version of this sweet potato, beef, and cottage cheese bowl making the rounds—and for good reason. It’s creamy, savory, and surprisingly satisfying. But we decided to take it one step further.

Ingredients (serves 4)

  • 2 medium sweet potatoes, cubed
  • 1 medium onion, sliced
  • 2 tbsp olive oil, divided
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • 1/4 tsp cayenne (optional)
  • 1 lb ground beef (85/15)
  • 1 packet taco seasoning
  • 2 ripe avocados, diced
  • 2 cups cottage cheese
  • Optional: hot honey, for drizzling
  • 4 servings (8 slices) of OA Gourmet Sandwich Slices, toasted

 

Instructions

  1. Roast the sweet potatoes and onions:
    Preheat your oven to 425°F. Toss the sweet potato cubes and onion slices with 1 tbsp olive oil, salt, pepper, paprika, garlic powder, and cayenne. Roast for 25–30 minutes, stirring halfway, until tender and lightly browned.

  2. Cook the beef:
    In a large skillet, heat 1 tbsp olive oil over medium heat. Add the ground beef, and cook until browned. Add taco seasoning and either water or chicken or beef broth to package directions. Cook for another 2-3 minutes or until liquid is absorbed. 

  3. Prep your bowls:
    In each bowl, add a generous scoop of ground beef, roasted sweet potatoes and onions, diced avocado, and ½ cup cottage cheese.

  4. Add the Sandwich Slices:
    Toast 2 Sandwich Slices per bowl and serve them on the side or make tacos!

  5. Optional: drizzle with hot honey
    A light drizzle of hot honey brings a sweet-and-spicy contrast that’s incredible with the creamy cottage cheese and rich beef.
    Note: If you’re watching your carbs, feel free to skip it—it’s still delicious without!
